Have you ever wondered what makes HōM burgers taste so good? Well it’s all about the beef and our blend of brisket, short rib and chuck. But to simply and quickly break it down for you, this is why we blend these three different cuts of meat, making HōM burgers have that natural salty and savory taste.

We begin our blend with brisket, the cut of meat from the breast or lower chest of the beef. We use this for its fat content and naturally salty taste. Next we use short rib where our burgers get most of its flavor. Beef short ribs are large, meaty and full of great flavor. We top off our blend with ground chuck which gives our burgers a really great texture. We found the chuck to be a good combination of fat and texture.

And thats it! So now you know what makes our burgers the best tasting burger in Charleston, now come enjoy one and get your pong on!

Many thanks to the good people at the City Paper for stopping by HōM to try out the food, drink and pong. We particularly enjoyed their description of the burgers:

In back you will find two Killerspin ping-pong tables, where you can play for free. They are awesome, but it’s the burgers that are a total ace. The menu includes seven juicy beef and five specialty burgers. The beef patties, ground in-house, are made from a blend of brisket, chuck, and short rib and are served up thick, juicy, and full of flavor. Most importantly, they are correctly cooked to order. If you order medium-rare, be prepared to see juices soak into the bun and flow onto the plate when the slightest pressure is applied. This is how it should be.

More confirmation on all that as we open (very soon!).

The F&B industry has been a big part of my (Pete Smith) life.

This picture is from a restaurant called “Smitty’s”, my Great-Grandfather’s nick-name. This was his first restaurant in Macon, GA that was operated from the late 20′s to mid 30′s. This “quick shop” style restaurant was so successful that he decided to open another restaurant, called S&S Cafeteria in 1936 in Columbus GA. At this point in time my Grandfather, who was 15, was the 2nd “S” in S&S (Smith and Son Cafeteria). Check out S&S in the pic below.

Throughout the remainder of the 1930′s and until present day, S&S has continued to grow and currently has 8 different locations throughout the Southeast. S&S is how I got started in the food business. The summer before my 9th grade, at 14 years old, I started working in the storeroom of the S&S Cafeteria in Atlanta, GA. I continued working there throughout the summer of my senior year in high school, until I moved to Charleston to attend CofC. While attending college I continued working in various restaurants around town and after 2 years of CofC, I realized it was not the place for me. I transferred to Johnson and Wales, completed the 4 year program, and graduated with a Bachelor’s degree in Food Service Management.

And now the next chapter begins with the launch of HōM.
